Potato Fufu
Potato fufu is a Nigerian swallow made from Irish potatoes instead of cassava, yam, or maize. Oats go into the blender with the potato, which gives the paste body so it cooks into a smooth, thick dough. The method is short: blend, stir over heat until lump-free, then steam briefly under a lid. Serve it alongside any Nigerian soup, in the same way you would use amala, eba, or iyan.
Instructions
Put the potatoes and oats in a blender with enough water to blend them into a smooth paste.
Pour the paste into a pot and set it over heat. Stir constantly as it cooks, until it turns into a thick dough with no lumps left.
Sprinkle in a few drops of water and cover the pot. Let the dough steam until it is cooked through.
Give the dough a final stir and serve it with a Nigerian soup.
