Potato Pie
Potato pie is a plain pastry-covered dish of thinly sliced potatoes, and it works because it asks for so little. The slices are layered with onion, salt, and pepper, then topped with butter and a splash of water that steams them under a lid of puff pastry. Slow baking for about an hour and a half leaves the potatoes soft and the crust crisp.
Instructions
Peel the potatoes and slice them very thin, so the layers cook through evenly under the pastry.
Lay the slices in a pie dish in layers. Between each layer, sprinkle a little chopped onion, salt, and pepper.
Add a dash of water over the potatoes, then scatter the chopped butter across the top.
Cover the filling with the puff pastry, which should be rolled out to ⅛ inch thick.
Bake at 375°F for about 1½ hours. The pie is ready when the pastry is golden and the potatoes are cooked through.
