This prepared white mustard thickens with hard-boiled egg yolks and toasted whole wheat flour instead of the usual plain paste of seed and liquid. Instructions

Toast the mustard seeds in a dry skillet, with no oil, until they are warm and fragrant. Tip them out and let them cool completely.

Pound the cooled seeds in a mortar and pestle until they are ground.

Crush the hard-boiled egg yolks and work them into the ground mustard seeds.

Crush the garlic cloves and add them to the mixture.

Toast the whole wheat flour in a dry skillet, again with no oil, then stir it into the mixture.

Mix in the vinegar, salt, and your choice of honey, treacle, or date syrup until the mustard is well combined.
