Princess Cake (Prinsesstårta)

Princess cake, or prinsesstårta, is a Swedish layer cake filled with vanilla cream and finished under a smooth green marzipan dome. The filling is a cooked custard of cream, egg yolks and cornstarch, whisked while it bubbles so it sets thick enough to hold the layers. Shop-bought sponge layers and ready-rolled marzipan cut the work considerably, so a tall, impressive cake is within reach of a 30 minute assembly.
Instructions
Combine the cream, egg yolks, cornstarch and sugar in a heatproof bowl set over a double boiler. Heat the mixture gently until it is just below boiling.
Whisk the cream steadily while it bubbles lightly, without letting it come to a full boil. Take it off the heat and let it cool for a few minutes, then stir in the vanilla powder.
Spread the vanilla cream between the cake layers. If you want jam in the cake, use it in place of the vanilla cream between one pair of layers.
Cover the top of the cake with whipped cream, building it up into a thick dome.
Drape the green marzipan over the whole cake so it covers the dome and sides, then dust the top with powdered sugar.
Chill the cake until you are ready to serve it.
