Pufftaloons are puffy fried dough pieces served hot with jam or golden syrup, a classic Australian treat. The traditional version uses a yeast bread dough and needs time to rise. This one relies on baking powder instead, so you can go from a bowl of flour to a plate of hot, golden fritters in a short stretch. The dough is just flour, butter and milk, which makes it easy to try on a whim.

Instructions

Stir the flour and baking powder together in a large bowl so the raising agent is spread evenly through the flour.

Add the butter and rub it into the flour with your fingertips until the mixture looks like fine crumbs.

Pour in the milk a little at a time, mixing as you go. Stop when you have a soft dough that holds together without being sloppy.

Pull off pieces of dough and deep fry them in hot vegetable oil. They are ready when they have puffed up and turned golden on the outside.

Serve the pufftaloons hot, with jam or golden syrup for spooning over or dipping.
