Pulut Durian (Durian with Sticky Rice)

Pulut durian is a Malay dessert that pairs hot, sweet durian sauce with plain steamed glutinous rice. The rice is seasoned only with salt, so it works as a neutral base for the rich fruit. Coconut milk softens the durian's strong aroma, and screwpine leaves add a grassy, vanilla-like fragrance. The whole dish needs just six ingredients and two simple cooking steps.

Instructions

Steam the glutinous rice with a pinch of salt until the grains are tender and cooked through.

Scoop the flesh from the durian and put it in a pot with the coconut milk, the sugar, the screwpine leaves and a little salt.

Bring the pot to a boil and cook it, stirring from time to time, until the sauce has thickened.

Spoon the hot durian sauce over the steamed rice and serve straight away.
