Quaker oat soup is a Nigerian soup that gets its body from oats ground to a fine powder. The powder thickens the pot much as cocoyam does in the soup it is often compared to, so you get a similar texture from a pantry staple. The method is short: stir the oats into hot water off the heat, then simmer with beef, carrots, onions and bay.

Instructions

Pour water into a pot and bring it to a boil.

Turn off the heat under the pot. Gradually stir the powdered oats into the hot water, mixing until the soup is smooth and free of lumps.

Add the chopped onions, carrots, beef chunks, bay leaves and ground pepper. Cook until the meat and the vegetables are tender.
