Queen's Soup (Zuppa Regina di Riso)
Queen's Soup, known in Italian as Zuppa Regina di Riso, is a smooth rice soup built from just four ingredients. Ground rice thickens the milk, and cooking it over a bain-marie keeps the heat gentle so nothing scorches or catches on the pan. A sieve and a knob of butter give it a silky finish, and the poultry stock added at the end brings savoury depth to the creamy base.
Instructions
Put the ground rice into a saucepan and pour in the milk a little at a time, stirring so the rice disperses without lumps.
Set the pan in a bain-marie and cook gently for 12 minutes. Stir the whole time, until the mixture is very smooth.
Add the butter, then pass the mixture through a sieve to remove any remaining texture.
Mix in the fowl stock and serve immediately.
