Quick and Easy Queso Dip
This queso dip comes together with a small pan and a microwave, and needs only four ingredients. Instructions
Pour the tomatoes with their juice into a small pan and add the chopped onion. Cook until the liquid has cooked away and the mixture is thick.
While the tomatoes cook, put the cubed Velveeta in a microwave-safe bowl and melt it in the microwave until smooth.
Add the grated monterey jack to the melted Velveeta and melt it in at 50% power, so the cheese softens gently, until the mixture is smooth.
Stir the cooked tomato and onion mixture into the melted cheese until evenly combined. The dip can also be made in a crock pot.
