Quick Guacamole
This guacamole needs only four ingredients and a few minutes at the cutting board. Because there is so little in the bowl, the avocado has to be properly ripe, and the lime juice does double duty, adding sharpness and slowing the browning. Red pepper flakes stand in for fresh chilies, so it works from the pantry. Start with less heat than you think you want, since you can always add more.
Instructions
Peel the avocado, remove the pit, and cut the flesh into small chunks about 1 centimeter (½ inch) on each side.
Put the chunks in a bowl and add the lime juice, a little salt, and a moderate pinch of red pepper flakes.
Stir until everything is well combined. Taste, and add more salt or pepper flakes if it needs them, a little at a time.
If you prefer fresh hot peppers to flakes, slice them finely before stirring them in.
