Quick Tomato Noodle Soup
Quick Tomato Noodle Soup turns a pair of instant noodle packs into a proper supper for two in about the time it takes to boil water. Fresh tomatoes break down in the hot broth and add a sharp, fruity edge to the seasoning packet. Sausages bring salt and fat, while raw onion stirred in at the end keeps a crisp bite. It suits a tired weeknight with a nearly empty fridge.
Instructions
Pour 1.5 liters of water into a large pot and bring it to a full boil over high heat.
Drop in the noodles and stir in the contents of one of the flavoring packets. Stir gently so the noodles separate as they soften.
Add the chopped tomatoes and the sausages to the pot. Keep the soup boiling for 5 minutes, until the tomatoes have softened into the broth and the sausages are heated through.
Stir in the chopped onion, then ladle the soup into two bowls and serve right away.
Make it personal.
