Quorn Pitta

This Quorn pitta gets its flavor from a homemade tomato paste sauce instead of ketchup. The author found plain microwaved Quorn pieces bland, so they blended tomato paste with vinegar, garlic, red pepper flakes and spices in the style of a taco mix. The result has no added sugar and is not greasy. It takes about ten minutes, needs only a microwave, and turns packaged vegetarian pieces into a filling for warm bread.
Instructions
Combine all the sauce ingredients in a bowl and stir until the mixture is completely smooth.
Microwave the sauce for 2 minutes, then stir it and check that it has not dried out. If it looks dry, stir in a little more vinegar, then microwave for another 2 minutes and set the sauce aside.
Microwave the Quorn pieces for 1 to 2 minutes. Stir in the sauce until the mixture is smooth and looks more like a paste than like chunks of meat.
Microwave the combined mixture for 2 more minutes. Prepare the pitta as the package directs, or use it as it is, and spoon the Quorn mixture inside before serving.
