Raspberry Vinegar
Raspberry vinegar is a fruit-infused vinegar made by steeping mashed berries in vinegar for four days, then sweetening and boiling the liquid down. The long soak pulls color and perfume from four pounds of fruit, so the finished bottle tastes clearly of raspberries rather than just sharp. Sugar is added cup for cup with the liquid, giving a syrupy, tart condiment that keeps well in bottles and suits dressings, glazes and sauces.
Instructions
Mash the raspberries in a large bowl and pour the vinegar over them. Leave the mixture to stand for 4 days.
Measure the liquid and pour it into a pot. For each cup of liquid, add 1 cup of sugar.
Bring the pot to a boil and cook for 20 minutes.
Strain out the fruit pulp and pour the liquid into bottles.
