Rhubarb Juice

Rhubarb juice is a tart, pink drink made from only three ingredients: rhubarb, water and lemon juice. Simmering the stalks until they collapse pulls out their sharp flavor and color, and the lemon keeps the result bright and sour. Choosing tender stalks matters, since they break down more easily. The whole thing takes about an hour, and the juice is ready to pour once strained.

Instructions

Put the chopped rhubarb and the water in a non-aluminum pot. Aluminum can give acidic foods like rhubarb an unpleasant flavor, so use stainless steel, enamel or glass-lined cookware.

Cook the rhubarb until it has broken down completely and is mushy.

Pour the mixture through a strainer, pressing lightly and letting it drain well. Keep only the juice and discard the pulp.

Stir the lemon juice into the strained juice until combined.
