Rib Rub
This is a big-batch barbecue rub built on two full cups of smoked paprika, which gives meat a deep red color and a campfire flavor before it ever reaches the grill. Brown sugar softens the cayenne and salt, while dry mustard, garlic powder, rosemary and a spoonful of cinnamon fill in the savory middle. It works on ribs and on most other barbecue, and the cayenne can be adjusted.
Instructions
Measure all the ingredients into a container that has a shaker lid, so the rub can be dispensed later without a spoon.
Put the lid on and shake the container well until the paprika, brown sugar and other spices are evenly mixed and no pale streaks of sugar or salt remain.
Shake the rub onto meat in a light, even layer before barbecuing. The mix is spicy, so start with a small amount and add more next time if you want more heat.
Store the rub in the closed container so it is ready for the next cookout.
