Rice bubble cake is a no-bake square made from just four ingredients: butter, sugar, honey and crisped rice cereal. The sugar, butter and honey are boiled until they darken, which gives the coating a toasty caramel note that plain melted sweeteners would miss. It takes a single pan and a few minutes, and the squares are easy to cut if you slice them before they set.
Instructions
Put the butter, sugar and honey in a large saucepan, one with enough room to hold the cereal later. Melt them together over a medium heat.
Bring the mixture to the boil and let it bubble for about 4 minutes, stirring now and then. It is ready when it begins to turn brown.
Take the pan off the heat and tip in the rice cereal. Stir well until every piece is evenly coated with the syrup.
Press the mixture into a buttered, lined tin.
Cut it into even squares while it is still slightly soft, before it sets hard.
Make it personal.
