Rice Milk

Rice milk is a dairy-free drink made from just two things, leftover cooked rice and water, so it costs very little and contains no additives. You blend them for a minute or two, chill the result, and you have about four cups. White, brown or wild rice all work, and the plain base takes well to cocoa, vanilla or banana. Add vanilla and cinnamon and it becomes a vegan horchata.

Instructions

Put the cooked rice and the water into a blender. If you want it sweetened or flavored, add your sweetener and any extras such as cocoa powder, vanilla or banana at this point, adjusting to taste.

Blend until the mixture is completely smooth, which takes roughly 1 to 2 minutes. It should look uniformly milky with no visible lumps of rice.

If the milk feels grainy, strain it through cheesecloth. Rice that was soaked in water overnight before cooking also gives a smoother result.

Transfer the milk to a container and refrigerate for at least 4 hours, or overnight if you can. Keep it chilled and use it within 5 days.
