Rice Wheat Spread

Rice Wheat Spread is a plain vegan spread built from two pantry staples, cooked rice and wheat flour. Mashing the rice releases its starch, and the flour binds it into a smooth paste that holds whatever flavor you give it. Soy sauce, mustard, thyme or a taco seasoning mix each take it somewhere different. It takes about 15 minutes and makes roughly three glasses, so you can keep it on hand.

Instructions

Mash the cooked rice in a large bowl until it has lost most of its grain structure. Add the wheat flour, the margarine or oil, and a little water, then mix until the mass is smooth and even.

Stir in any of the optional flavorings you like, such as soy sauce, mustard, ketchup, garlic, pepper, onions, thyme or a seasoning mix. You can also keep it simple and add only your favorite herbs.

Leave the spread to rest so the herbs and seasonings can flavor the mass. Then spoon it into glasses or jars for serving.
