Rice with Coconut (Arroz con Coco)

Arroz con coco is rice cooked in coconut and water, with sugar and raisins giving it a sweet edge against the salt. It needs one pot and no stirring once the lid goes on. The sweetness is the point here, since it sets off smoky grilled meat and the cool, buttery avocado half served alongside. Use either jarred coconut concentrate or fresh coconut milk, whichever you can find.

Instructions

Put the coconut concentrate or coconut milk in a pot with the water, rice, salt, sugar and raisins. Stir briefly so the coconut and sugar are spread through the liquid.

Cover the pot and bring it to a simmer, then turn the heat down to very low.

Cook, keeping the lid on, until the rice is tender and has absorbed all the liquid. Check that no liquid is left pooling at the bottom before you take it off the heat.

Serve the rice with half an avocado and grilled meats of any kind. For a variation, some cooks stir in coconut that has been browned in oil.
