This rocky road is a short, three-ingredient version of an Australian confectionery made from marshmallow chunks held in chocolate. The coconut oil is the useful detail: stirred into the melted milk chocolate, it loosens the mixture for easier spreading and gives the set slab a cleaner bite. Cooling the chocolate before adding the marshmallows keeps them intact, so each piece shows soft white pockets inside the chocolate.

Instructions

Put the chocolate in a microwave-safe bowl and microwave until it is melted and smooth enough to stir.

Stir the coconut oil into the hot chocolate. The heat of the chocolate will melt the oil, and the mixture should turn glossy and even.

Let the chocolate cool slightly so it will not melt the marshmallows, then fold in the marshmallows until every piece is coated.

Grease a pan and line it with parchment paper. Spread the mixture into the pan and leave it until completely set.

Lift the set slab out of the pan and cut it into pieces.
