Rojak (Salad with Sweet Chile Sauce)
Rojak is a fruit and vegetable salad dressed with a sweet, chile-spiked brown sugar syrup. The appeal is contrast: sour apple, juicy orange, sweet mango and pineapple sit beside crisp cucumber and thin raw turnip, and the syrup ties them together with caramel sweetness and a slow heat from fresh red chiles. Nothing here is cooked except the dressing, so the dish comes together fast and suits a warm day.
Instructions
Bring the water to a boil in a small saucepan and stir in the brown sugar until it dissolves completely. Lower the heat and let the syrup simmer for 10 minutes.
Stir in the chopped red chiles and the pinch of salt. Take the pan off the heat and let the syrup cool to room temperature.
While the syrup cools, peel the mango, apples, pineapple, cucumbers and oranges, and cut them into cubes or slices. Slice the peeled turnip very thin.
Pile the fruit and vegetables into a large bowl. Pour the cooled chile syrup over the top and toss gently so every piece is coated.
