Rosehip Tea
Rosehip tea is a simple infusion made by boiling the fruit of the rose plant in water. Rosehips are very high in vitamin C, and the brew turns a pinkish color with a tart, acidic edge that is milder than lemon juice. The key is patience: the hips must boil long enough to swell and split so the water can reach the seeds. Sweeten it lightly if the tartness is too much.
Instructions
Put the rosehips in a pot with water, using 2 tbsp of rosehips for every pint of water, and bring it to a boil.
Keep the pot boiling for at least 10 minutes. The hips need this time to swell and split, which lets the water reach the seeds inside and draw out their flavor.
Take the pot off the heat and let the tea cool for a moment. Stir in sweetener if you want it, then pour the tea into cups.
