Rosemary Garlic Oil
Rosemary garlic oil is a simple pantry staple you can make at home with a handful of ingredients. A neutral, high-smoke point oil such as canola or grapeseed carries the flavor without competing with it. Twenty cloves of garlic and six sprigs of rosemary steep slowly over low heat for an hour, so the oil takes on their taste without scorching. Use it for dipping, roasting, or finishing.
Instructions
Pour the oil into the tallest, largest pot you have and set it over low heat. The tall sides leave room in case the herbs make the oil bubble up.
Add the rosemary sprigs, garlic cloves and salt to the pot. Keep the heat low and let everything warm gently together for 1 hour.
Strain the oil to remove the rosemary and garlic, then pour it into an airtight container. Some cooks keep it in the refrigerator and others do not, so choose the storage that suits you.
