Saffron Sweet Rice
Saffron sweet rice is a golden side dish of basmati cooked with sugar, raisins and almonds. The saffron goes straight into the cooking water, so every grain takes on its color and floral scent. The rice steams in its own heat at the end, which keeps the grains separate and tender. Toasting the almonds first adds a firmer crunch against the soft, plump raisins. It suits plain roast chicken or tofu well.
Instructions
Wash the rice, then put it in a pot with enough water to stand level with the depth of the rice.
Stir in the salt, saffron, sugar and raisins.
Cook over high heat until the water has disappeared from the surface and steam is rising through small holes in the rice.
Turn the heat down to its lowest warm setting and scatter the almonds over the top.
Cover the pot tightly and leave the rice to stand for 20 minutes, then fluff it and serve.
