Salad Shirazi
Salad Shirazi is a finely chopped cucumber, tomato and onion salad dressed with lemon juice or vinegar and finished with dried mint. The tiny dice are the point: the sour dressing reaches every piece, and the juices mingle into a light, tangy bowl. It takes minutes, needs no cooking, and is often served in place of a green salad when a lighter side is wanted.
Instructions
Cut the cucumbers, tomatoes and onions into very small, even pieces so every forkful has a bit of each. Put the chopped vegetables together in a bowl.
Pour over enough lemon juice or vinegar to coat the vegetables, and let them sit so they take on its sourness.
Season with salt and pepper, then scatter dried mint over the top. Toss lightly and serve.
