Salmon Seasoning

This salmon seasoning is a big-batch dry rub that sits on the shelf and is ready whenever fish is on the menu. Paprika forms the base, and dehydrated lemon peel adds citrus without any moisture to spoil the mix. Granulated garlic, a little sugar and cracked peppercorns give it body, while red pepper flakes and cayenne bring steady heat. Shake it over fillets before cooking.

Instructions

Measure all of the ingredients into a large bowl. Use cracked peppercorns rather than fine ground pepper, so the blend keeps some texture.

Stir everything together thoroughly, until the paprika, lemon peel, garlic, sugar, salt and peppers are evenly distributed and you see no pockets of any single ingredient.

Spoon the mix into an airtight container that has a shaker lid. Store it in a cool, dark place so the color and aroma of the spices hold up.
