Salty Lassi (Namkin Lassi)

Salty lassi is a savory yogurt drink from the Indian subcontinent, and it is a good answer to a hot afternoon. Instead of sugar, it gets its character from roasted ground cumin, fresh green chile, salt and a sharp splash of lime or lemon juice. The chile heat is yours to set. Blending the ice in at the end is what gives it a thick, frothy head.

Instructions

Chop the green chile peppers, using as much as suits your taste. Roast the cumin seeds and grind them to a powder if you have not already done so.

Put the yogurt, cold water, chopped chiles, ground cumin, lime or lemon juice and salt into a blender. Leave the ice out for now.

Blend until the mixture is completely smooth, with no lumps of yogurt or flecks of chile left floating on top.

Add the crushed ice and blend again until the drink turns frothy and the ice has broken down. Pour into glasses and serve right away.
