Seasoned pepper is a homemade grinder blend that replaces plain black pepper at the table. Coriander seeds add a citrusy warmth, while rock salt, garlic and onion season the food as the mill turns. A few sugar cubes round off the sharp edges and help meat take on color in a hot pan. Grind it fresh over eggs or vegetables, or press it onto a steak before cooking.

Instructions

Measure the black peppercorns, coriander seeds, rock salt, granulated garlic and dried minced onion into a bowl. Add the sugar cubes.

Stir everything together so the garlic and onion are spread evenly through the whole peppercorns and seeds.

Tip the mixture into a pepper mill, filling it as far as it will hold. The rock salt, coriander and sugar cubes will grind down along with the peppercorns.

Grind it over food the way you would use plain black pepper. It also works as a rub on steak or as a blackening seasoning.
