Semo (Nigerian Cooked Semolina)

Semo is a Nigerian swallow made from nothing more than semolina and water, and it exists to carry soup. The soft, mild dough is pinched off by hand, rolled into a small ball and used to scoop up egusi, okro or efirin soup. The technique is the whole skill here: add the flour gradually and stir hard, and you get a smooth, lump-free mound.
Instructions
Bring a pot of water to a boil.
Add the semolina flour a little at a time, stirring with a spatula after each addition. Keep mixing until the mixture turns into a smooth dough with no lumps, and stop adding flour once it becomes hard to stir.
Stir the dough hard for a while to beat out any remaining lumps.
When the dough is smooth, sprinkle in a small amount of water to loosen it to the texture you like. Cover the pot and cook for about 3 minutes.
Serve hot alongside the soup of your choice.
