Semolina Pudding

Semolina pudding is a quick milk dessert that needs only a saucepan, a spoon and about half an hour. The lemon zest and pinch of cinnamon scent the milk before the semolina goes in, so the porridge tastes of more than sugar. A spoonful of nut or seed oil can stand in for butter, and folding in whipped egg white makes the finished pudding noticeably softer and airier.

Instructions

Pour the milk into a large saucepan and add the salt, lemon zest and cinnamon. Bring it to a boil over medium heat.

Stir in the semolina, then turn the heat down to low. Keep stirring constantly until the mixture swells and thickens into a porridge, which happens very quickly.

Stir in the sugar, the vanilla sugar and the butter (or oil) until the butter has melted and everything is evenly mixed. Take the pan off the heat.

If you like a richer, lighter pudding, stir in the egg yolk and then gently fold in the whipped egg white. Both are optional, and you can use either one or both.

Serve the pudding while it is still warm. The sugar can be partly swapped for another sweetener or left out entirely.
