Sesame Noodle Salad
Sesame Noodle Salad is a cold angel hair dish built on just a few ingredients and a small amount of toasted sesame oil. Fine noodles soak up the oil quickly, while raw carrot gives crunch and a generous handful of cilantro and scallion adds a fresh, grassy edge. Instructions
Cook the angel hair pasta following the package instructions, then drain it well in a colander.
Transfer the drained pasta to a large bowl and add the sesame oil. If the strands seem dry or start to stick together, add a little olive oil to loosen them.
Season with the salt, adding it to taste, and toss until the noodles are evenly coated.
Add the chopped cilantro, scallions and sliced carrots, and toss again until the vegetables and herbs are spread through the noodles.
Chill the salad in the refrigerator before serving.
