Sev Puri (Crispy Indian Snack with Potato)
Sev puri is a street snack from India built on contrast, with a crisp base, soft potato and a tangle of fine, fried gram flour noodles on top. The two chutneys do the real work: sweet-sour tamarind against sharp green coriander. There is no cooking beyond boiling the potato, so it comes together in minutes. Assemble it just before eating, because the puris go soft quickly once the toppings are on.
Instructions
Lay the puris out on a plate in a single layer. Press a small hole into the center of each one so it can hold a filling.
Spoon a few cubes of boiled potato into each puri.
Add about ¼ tsp of tamarind chutney and ¼ tsp of coriander chutney to each puri. Sprinkle over the cumin in powder form, the salt and the red chile powder.
Scatter finely chopped onion over the tops. Then cover each puri generously with fine sev.
Finish with a sprinkle of finely chopped fresh coriander. Serve right away, while the puris are still crisp.
