Seven Minute Icing is a fluffy, glossy white frosting made from one egg white and a cup of sugar. The mixture is beaten over boiling water in a double boiler, so the sugar dissolves fully and the foam sets into soft, marshmallow-like peaks. It needs no butter and no electric mixer, only a rotary beater and steady arm. Use it to cover a cake in tall swirls.

Instructions

Combine the egg white, sugar, and cold water in the top of a double boiler. Do not start heating until everything is in the pot.

Set the pot over boiling water. Beat the mixture with a rotary egg beater for seven minutes, keeping the beater moving the whole time.

Add the baking powder and the flavoring, then beat briefly to blend them in.

Take the pot off the heat and keep beating until the icing turns thick enough to hold its shape.

Spread the icing over the cake right away, pulling it up into swirls with the back of a spoon or spatula.
