Sharbat bil Loz (Almond Syrup Drink)

Sharbat bil loz is an Iranian almond drink made from a scented syrup that you dilute at the glass. Blanched almonds are blended with water, strained through cheesecloth and simmered gently, then perfumed with orange blossom water or rosewater once the heat is off. The sugar is optional, so you can keep it plain and mild. The cooled syrup is mixed with ice water to taste.

Instructions

Grind the blanched almonds in a blender until they are very fine. Add the water and keep blending so the almonds break down into a milky liquid.

Line a sieve with cheesecloth and set it over a bowl. Pour in the almond mixture and let the liquid drain through, keeping the liquid.

Once it stops dripping, gather the cheesecloth and squeeze the pulp to get out as much liquid as you can. Discard the pulp, or save it for another use.

Pour the strained liquid into a heavy saucepan. Stir in the sugar if you are using it.

Bring to a boil, stirring constantly, then turn the heat down and simmer very gently for 5 to 10 minutes.

Take the pan off the heat and stir in the orange blossom water. Leave the syrup to cool completely.

To serve, pour ¼ cup of the syrup into a glass, add ice water, and stir well.
