Shikanjvi (Punjabi Spiced Lemonade)

Shikanjvi is a salty, sour lemonade from the Punjab region of South Asia, and this version takes about a minute to make. Salt and black pepper sit alongside the lemon and ginger, which gives it a sharp, savory edge that plain sweet lemonade lacks. Raw sugar adds a gentler sweetness. Serve it very cold on a hot day, and adjust the sugar to your taste.

Instructions

Pour cold water into a tall glass, leaving some room at the top so the drink can be shaken.

Add the juice of both lemons, the chunk of ginger, the sugar, the salt and the pepper.

Shake the glass hard so the sugar and salt dissolve and the flavors mix evenly. Serve the drink while it is still cold.
