Shopska Salata (Tomato, Cucumber, and Bell Pepper Salad)

Shopska salata is a cold salad of chopped tomato, cucumber and pepper, finished with a thick drift of grated white cheese. The cheese is the point: as it sits on the vegetables it softens into the juices and seasons the whole bowl. This version stays simple, with parsley, onion and a plain oil and vinegar dressing. Use ripe tomatoes and crisp cucumbers, since nothing here is cooked to hide a weak ingredient.
Instructions
Cut the tomatoes, cucumbers and peppers into small pieces, cubes if you can manage it. Even, bite-sized pieces make the salad easier to eat and let the dressing coat everything evenly.
Put the vegetables in a large bowl and add the chopped parsley and onion. Season with salt, oil and vinegar to taste, then toss well so the juices from the tomatoes mix with the dressing.
Grate the white cheese over the top just before serving, if you are using it. Add a handful of olives on the side or over the cheese if you like.
