Shrewsbury Cakes
Shrewsbury cakes are small British butter cookies that need only five ingredients and one bowl. The dough is creamed butter and sugar bound with a single egg white, then flavored with a little nutmeg, which gives the cakes a warm, faintly spiced edge without hiding the butter. They go from mixing bowl to plate in about 10 minutes of baking, so they suit a quick batch for guests, and they are easy to serve several at a time.
Instructions
Heat the oven to 350°F. Grease the cookie sheets with butter or cooking spray.
Put the softened butter and sugar in a mixing bowl and cream them together until the mixture turns fluffy.
Add the egg white and stir until it is completely mixed in.
Add the nutmeg and flour and stir until no dry flour remains and the batter is even.
Drop teaspoonfuls of batter onto the prepared sheets, leaving about two inches between them.
Bake at 350°F for 10 minutes.
Take the cakes out of the oven. If any have spread into each other, cut them apart with a knife.
Lift the cakes onto a plate with a spatula and serve.
