Simple Chicken Salad
This chicken salad is a quick way to use up cooked chicken, and it needs no more than a bowl and a knife. Bacon adds salt and a savory chew, while a teaspoon of raw minced garlic gives the mild mayonnaise dressing a sharp edge. Fresh lettuce goes in at the end for crunch. Instructions
Make sure the chicken and the bacon are both fully cooked, then dice them into small, even pieces so that every forkful gets a bit of each.
Put the diced chicken and bacon in a large bowl. Add the lettuce, the mayonnaise, the dressing and the minced garlic.
Toss everything together until the mayonnaise and dressing coat all the pieces and nothing looks dry or clumped in one spot.
