Simple Chocolate Fudge

This chocolate fudge needs only two ingredients and one pot, which makes it a good first candy for anyone who has never made sweets. The sweetened condensed milk does the work of sugar and cream at once, so there is no thermometer and no risk of grainy crystals. Melt the chips gently over a double boiler, stir, and let it set. Serve it at room temperature or chilled.

Instructions

Set up a double boiler and melt the chocolate chips in it, stirring now and then until smooth. Melting them over direct heat risks burning the chocolate, so keep the chips above the water rather than in it.

Pour in the sweetened condensed milk, and the vanilla if you are using it. Stir until the mixture is uniform and glossy with no streaks.

Line a baking dish, bowl, or other mold with wax paper or foil. Without a lining the fudge will stick fast to the sides and bottom.

Scrape the fudge into the lined mold and smooth the top. Leave it to cool for several hours, until firm enough to pick up and eat.
