Simple Syrup
Simple syrup is sugar dissolved in water, and it is the easiest way to sweeten a cold drink. Sugar stirred straight into iced tea or a cocktail tends to sink and stay gritty, while syrup blends in at once. The ratio is yours to set: use equal parts for a light syrup or two parts sugar to one of water for a thicker, sweeter one. It takes minutes on the stove.
Instructions
Put the sugar and cold water into a saucepan.
Set the pan over high heat and bring the water to a boil, stirring constantly.
Once every grain of sugar has dissolved, take the pan off the heat. The liquid should look clear.
Leave the syrup to cool to room temperature, which takes only a few minutes.
Pour the cooled syrup into a storage container and refrigerate it until you need it. It keeps for up to a week.
