Sindhi raitha is a quick yogurt relish that gets its sourness from amchoor, dry mango powder, instead of lemon or chaat masala. The thick curd carries chopped raw onion, tomato and green chile, so every spoonful is cool, sharp and a little hot at once. There is no cooking and no tempering, which makes it an easy side to set beside rice, flatbread or any spiced main.

Instructions

Finely chop the onion and the green chiles, and chop the tomatoes. Keep the pieces small so they spread evenly through the yogurt.

Put the thick plain yogurt in a bowl and add the onion, chiles and tomatoes.

Add the two pinches of amchoor and a little salt. Stir everything together until the vegetables are evenly coated and the amchoor has disappeared into the yogurt.

Taste and adjust the salt. Serve the raitha cool.
