Sirniki (Russian Cheese Fritters)

Sirniki are Russian curd fritters made from little more than cottage cheese, eggs and flour. The batter comes together in one bowl and needs no resting, so the dish is quick enough for a weekday morning. Fried in butter, the outsides turn golden while the centers stay soft and tangy. Russians serve them after dinner or at breakfast, topped with sour cream and sugar, jam or apple sauce.

Instructions

Put the cottage cheese, eggs, flour, sugar and salt in a bowl and stir them together until you have a thick, even paste.

Warm a frying pan over moderate heat and add a little oil or melted butter to coat the base.

Take a piece of the paste and shape it into a small, round, flat patty. Lay it in the warm pan, and repeat with more patties without crowding them.

Leave each fritter alone until the underside turns golden, then flip it over.

Cook until both sides are a deep golden brown, which tells you the fritter is ready to eat.

Serve warm with sour cream and sugar, jam or confiture, or apple sauce on the side.
