Smoky Chipotle Marinade

This marinade packs a smoky, sweet and sharp mix into a single zip-top bag, with no cooking before the meat goes in. Chipotle hot sauce and adobo bring the smoke and heat, honey rounds them off, and tequila and malt vinegar add a tangy edge. Chicken broth thins it so it coats the meat evenly. The bag keeps cleanup to a minimum, and the timing is flexible.

Instructions

Measure the chipotle hot sauce, adobo sauce, honey, tequila, chicken broth and malt vinegar into a large zip-top plastic bag.

Seal the bag and squeeze it gently or shake it until the honey has loosened into the liquid and the marinade looks evenly mixed.

Open the bag and add the pieces of meat. Press out as much air as you can, then seal the bag again so the meat is covered by the liquid.

Set the bag in the refrigerator and leave the meat to marinate for as long as you like. Turn the bag over once in a while so every piece stays coated.
