This snickerdoodle is a pan cake cut into squares, taken from a Boise newspaper printed in 1901. The paper described it as a quickly made little cake that children loved, copied from an old scrapbook. The batter is a pourable mix of milk, butter and eggs, with cream of tartar and baking soda doing the rising. A dusting of cinnamon sugar finishes the top, and the method is easy to follow.

Instructions

Stir the sugar and butter together until the mixture is creamy and smooth.

Beat in the eggs. Stir the baking soda into the milk until it dissolves, then add the milk to the bowl.

Add the flour, cream of tartar and salt, and beat the batter thoroughly until no dry flour remains.

Pour the batter into shallow pans. Dust the top with cinnamon and sugar.

Bake for 15 minutes. Let the cake cool, then cut it into squares.
