Sockerdricka (Swedish Ginger Drink)
Sockerdricka is a home-fermented Swedish ginger soft drink that dates back to the 19th century. The name means sugar drink, and the original is a world away from the carbonated, citric-acid versions sold in shops today. Yeast and a raisin in each bottle give it natural fizz over about a week. The contributor suggests cutting the yeast to 10 g and using more ginger for a livelier flavor.
Instructions
Put the water, sugar, lemon peel and crushed ginger in a large pot and boil them together for 15 minutes.
Strain out the peel and ginger, then leave the liquid to cool before going on.
Stir the yeast into the cooled liquid and leave it to ferment for 2 days.
Pour the drink into bottles and drop a single raisin into each one.
Cork the bottles and leave them to rest for 5 days. After that the sockerdricka is ready to drink.
