Soppa ta' l-Armla (Maltese Widow's Soup)
Soppa ta' l-Armla, or widow's soup, is a Maltese vegetable soup finished with ricotta, eggs and small local cheeselets. It is a meat-free dish built from cheap, ordinary produce: onion, potato, courgette, cauliflower, peas and tomato. The cheese and eggs go in only at the end, so they cook gently in the hot broth and make the soup filling enough to serve as a light main meal for four.
Instructions
Slice the onions, potatoes, courgettes, peeled tomatoes and cauliflower. Warm a small amount of oil in a pan and fry the onions until they turn translucent.
Transfer the onions to a pot and add the potatoes, courgettes, tomatoes, cauliflower, peas and tomato paste. Season with salt and pepper, then bring the pot to a boil.
Lower the heat and simmer until all the vegetables are tender when pierced with a knife.
In the last few minutes of cooking, add the eggs, ricotta and cheeselets. Let them cook gently in the soup until the eggs are set and the cheese is warmed through, then serve.
