Sour Cream Dip

This sour cream dip is a quick herb dip that depends on a handful of fresh green things rather than a packet of seasoning. Dill, chives and parsley sit in a base of sour cream loosened with a little mayonnaise, while grated onion spreads its sharpness through every spoonful. Dried dill works if fresh is missing. Chilling the bowl before serving lets the flavors settle, and the dip suits raw vegetables or crisps.

Instructions

Put the sour cream and mayonnaise in a medium bowl. Stir them together until the mixture looks smooth and evenly pale.

Add the dill, grated onion, chives and parsley. If you only have dried dill, crumble it between your fingers as it goes in, using the smaller amount listed.

Fold everything together until the herbs and onion are spread evenly through the dip.

Season with salt and ground pepper, tasting as you go, until the flavor suits you.

Cover the bowl and chill the dip in the refrigerator before serving, so the herbs and onion have time to flavor the cream.
