This soy ginger barbecue sauce is a pantry-style mix of salty soy, sweet hoisin and sharp lemon that needs no cooking at all. Everything goes into one jar and gets shaken together, so it is easy to make ahead and keep ready. Hoisin gives body and sweetness, rice wine vinegar and fresh lemon cut through it, and the garlic and ginger powders add steady background heat for brushing on meat or tofu.

Instructions

Measure the soy sauce, hoisin sauce, rice wine vinegar and lemon juice into a clean mason jar. Squeeze the lemon fresh, since its juice is the main source of brightness in the sauce.

Add the garlic powder and ground ginger to the jar.

Screw the lid on tightly and shake until the powders are fully mixed in and no dry clumps remain on the surface or at the bottom.

Store the jar in the refrigerator. The sauce keeps for as long as the soy sauce or the hoisin lasts, whichever runs out first. Shake the jar again before each use.
