Space Cake
Space cake is a small drop cake made with a full cup of finely ground cannabis stirred into a simple cocoa batter. The butter and sugar are creamed first, which gives the batter a thick base that holds the dry ingredients and the cannabis evenly. Swapping in THC butter, leaving out the cocoa, or adding mint essence and chocolate chips are all easy changes. Check your local laws before baking, and label the tray clearly.
Instructions
Heat the oven to 200°C. Grease a non-stick baking tray or line it with parchment paper.
Put the butter and sugar in a bowl and work them together until you have a thick batter.
Add the flour, baking powder, cannabis and cocoa powder. Stir in the water a little at a time until the mixture is smooth, and add any extras you want at this point.
Using a tablespoon, drop scoops of batter onto the tray. Leave about ½ inch between each scoop and between the scoops and the edge of the tray.
Bake in the preheated oven for 10 to 20 minutes, until the center is cooked. Push a toothpick into the center of a cake: if batter sticks to it, the cakes need more time.
Take the tray out of the oven and let the cakes cool.
