Sparkling Lemonade with Fresh Herbs
This sparkling lemonade is a quick, cold drink made from four lemons, a little sugar and a liter of fizzy water. Dissolving the sugar in the lemon juice before adding the bubbles keeps the drink evenly sweet and lively. Mint gives a cool edge, while lemon balm adds a softer, lemony fragrance, and either one works. It takes ten minutes, and orange or other citrus can replace the lemon.
Instructions
Squeeze the juice from all four lemons into a large jug, removing any seeds that fall in.
Add the sugar to the juice and stir until you can no longer see or feel any grains at the bottom of the jug.
Pour in the carbonated water slowly so it keeps its fizz, then drop in the fresh mint or lemon balm leaves.
Serve the lemonade cold.
If you prefer a different flavor, orange juice or another citrus juice can stand in for the lemon juice.
